Ingredient Challenge- 4


I know this is going to be a disappointment to so many who want see how I fixed the avocado, but I just couldn't. I cut it open took a spoonful and paid Rylee $1 to taste it for me to see what she thought. She hated it. I gave David a bite with him giving the same reaction. I took a small nibble, and just decided I couldn't do it. It had the taste and texture and smell of eating raw pumpkin, so I put it back together and brought it to the Chocolate party I was attending that night and gave it to a most happy recipient. So, there you go, my avocados found a loving home.

In spite of that minor setback, my ingredient this week was DUCK. I know, you're saying," Duck??? For real? Where would you even buy that?" Well, my friends, David has a co-worker who is an avid hunter and this was some of the fruits of his labor. We got more than duck, (which luckily I didn't have to defeather, disembowel, chop up, etc.) but I will save those meats for another meal.

I didn't even check on Allrecipes for this one. David came home with a recipe so he fixed the meal.

Here is what he did:

*Butterfly duck breasts
*Red Onion, Jalapeno jelly (we used raspberry salsa) stuffed inside
*close with toothpick
*soak in Italian dressing
*Wrap with a strip of bacon
*grill



I tried to help with the cooking part, but since neither of us have prepared duck, unfortunately, it was overcooked. David said it reminded him of liver with its consistency, as it had more of a "soft" texture. I loved the flavor, but that may be due to the other ingredients used. We had all the kids eat one half of a breast. They liked it enough to eat it without complaint, but moved on to the pizza we had as a back up. This tasted great with long grain and wild rice, green beans, homemade bread, and a strawberry/ banana smoothie!

wow, that sounded good up until the Italian dressing part. Blegh. You should do tofu next!!!
