First of all, before I explain how the light bulb went off while preparing dinner tonight, I have to explain my absence. It is sheer laziness. I have lots of pictures on my camera of stuff I need/ want to blog about including the snow in NC about 6 weeks ago, but I don't want to download all of them and then put them into different places on my computer. Its pretty pathetic, I know. So, I have a blog that won't require pictures. You just have to use your imagination.
Tonight I was making chicken enchiladas. My dilemma is never measuring the right amounts of "stuffing" for each tortilla. Usually my last one filled is the fullest and then I have to go back and redo some. So, I figured out a way to make this work to where this won't happen any longer.
First, I flatten the meat mixture in my pan, and then . . .
Sliced it like a pizza!
8 sections for my 8 tortillas! I take each meat section and put it in one of the tortillas. I know, I know, pretty simple. But it was one of those, "Why didn't I think of that 12 years ago?" type of moment.
It worked out like a charm! All my tortillas are perfectly stuffed and in the oven. If you hear a noise, it's me patting myself on the back. : )

I love it!! And it makes it even more exciting for your kids that it looks like pizza!! What a concept!! p.s. yes, I am a total coupon friek now, thanks to you, hahaha! Seriously, why haven't I been doing this all my life? By the way, we also LOVE the game Mancala, it's a family favorite!
