I am normally not that adventurous when it comes to changing recipes. I'm afraid that what ever I do won't taste as good as the original. But, I have learned to just do it and have never been disappointed. My first example is from Sunday night when I wanted to make coffee cake. I love the Jiffy mix recipe but since it hasn't been on sale in forever, I was going to use my Bisquick. I only had about a cup left and I needed 4 cups for my double batch. So, I used Hungry Jack pancake mix. I figured, "why not? It has most of the same ingredients, right?" Well, it was wonderful. It was sweeter than normal, which of course, didn't pose a problem for anyone here.
I have also just tried coming up with my own recipes, kind of like "Semi-Homemade with Sandra Lee" from the Food Network. I took a Knorr Side Plus Veggies, the roasted Chicken Rice with Harvest Vegetables, added broth and chicken and had a VERY inexpensive Chicken and Rice Soup Dinner, I'm going to say it was about $1.00 for all of it! You can't beat that! (I got the Knorr sides for free during Triples a couple of months ago, the broth was from a chicken a cooked up, and the chicken was $.59/ pound!) My family loved it!
The last adventure I'm going to mention is cooking right now in my crock-pot. It's DEER! I have never cooked it before, but someone was nice enough to give us about 8 pounds of it. So, I'll have to report later on how it turned out. My kids are pretty sickened by the idea of eating it. I can't wait!

Wow. Venison. I was a little curious about that when it was mentioned at the mean canning class. Glad it turned out!!
